Dinner tonight....Easy Beef Enchiladas
1 lb hamburger, browned
2 cups shredded cheese
1 can mild green chile sauce
1 can mild (or medium/hot depending on your preference) enchilada sauce
8 pack of tortilla shells
Brown hamburger. Drain. Add 1/2 can of green chile sauce, 1/2 can of enchilada sauce, and 1 cup of cheese. Cook until cheese is melted. Remove from heat.
In a greased 9x13 glass pan, fill shells with hamburger mixture, roll up and place in pan. Normally about 6-8 shells depending on how full you fill them. Pour rest of both sauces over top. Top with remaining 1 cup of cheese. Bake at 350 degrees for 15-18 minutes or until cheese is melted.

Ham and Cheese Crescent Roll-ups Recipe
Matt and I had just a lazy dinner tonight and I tried this easy new recipe. They were so simple and yet delicious.
Ham and Cheese Crescent Roll Ups
1 can (8 oz) Pillsbury refrigerated crescent dinner rolls
8 thin slices of deli ham
4 thin slices of Cheddar cheese, cut into strips
Heat oven to 350 degrees. Separate dough into 8 triangles. Place 1-2 pieces of ham on each triangle, place 2 strips of cheese down the center of the ham. Fold in edges of ham to match dough triangle.
Roll up each crescent, ending at the tip of the triangle. Place with tips down on ungreased cookie sheet.
Bake 15-19 minutes or until golden brown. Immediately remove from cookie sheet. Serve warm.

Iowa vs. Minnesota
Once a Hawkeye fan, always a Hawkeye fan....however I do have to give props to the Minnesota Gophers for beating us by 1 point this year (second year in a row that Minnesota has won). This is my favorite game of the year for Iowa football. However, in years like this I have to be ready to take any comments that my in-laws may make as they are well deserved after a 22-21 win by Minnesota.
Just because I live in Minnesota doesn't mean that I am a Gophers fan (even though my husband is!).
GO HAWKS!

Our Wedding Day
Since I mentioned being busy with the wedding prevented me from keeping up with my blogging previously, I thought a good place to start when it comes to blogging is our wedding day.
Our wedding day, September 17, 2011, was absolutely perfect. The day was everything we dreamed it would be and so much more. The weather was nice and perfect for pictures. It was a little windy but we didn't let that damper our day. The ceremony was absolutely beautiful with amazing music by our friends, Kathie and Kelly. Their duet during our unity candle was one of the most touching parts of the ceremony for me.
Our reception was an absolute blast. We had SO much fun celebrating with all of our friends and family. We were so touched by the number of people that traveled to help us celebrate our special day. We had so much fun with everyone.
The food was absolutely delicious....roast beef, swiss almond chicken, red potatoes, corn, lettuce salad, pasta salad, and bread. I am pretty sure that no one was hungry after visiting the buffet. Our cake was beautiful. Two different flavors including white chocolate cake with strawberry Bavarian cream filling and butter cream frosting as well as chocolate raspberry cake with raspberry filling and chocolate butter cream frosting. Rumor has it that it was delicious and I don't doubt that as Perfect Day Cakes always does an amazing job, however I do have to admit that besides having cake smashed in my face by my wonderful husband I didn't get to enjoy any of our wedding cake. This made me very sad as wedding cake is my favorite part of weddings but I guess I will just have to wait until our 1 year anniversary to enjoy the cake.
The dance was definitely one of my favorite parts of the day. We had a blast dancing with all of our friends, family and bridal party! It was so fun to just let loose and have fun with everyone.
I cannot say enough good things about our wedding day. It was perfect and that may even be an understatement. We definitely couldn't have done it without the help from our bridal party, friends and family.

Back to Blogging....
I have tried blogging before but got too caught up in wedding related stuff to keep up with it. I am going to give it a good try again as I think it will be a good way for our families and friends to keep up with what Matt and I are up to.
Happy reading.
